York Strip steak.
Top Sirloin
Those looking

Strip
Sirloin Steak

This is a choice filet mignon that has been completely trimmed of all exterior
fat and is cut by the steakcutter from the leanest part of the tenderloin.
A favorite for those on ultra low fat diets or who crave the tenderness & taste
of filet mignon but want the absolute leanest cut possible.
