While there are well over a dozen primary steak cuts available to choose from, there are really 7 major categories of steak that are widely available

 

and represent the most popular selections with butchers today.  A summary of the primary steak cuts is listed below -- review each to see which is right for your needs:

Filet Mignon

Many people consider filet mignon to be the single most popular and suculent cut of beef.  Known for being one of the most tender steaks, it filet mignon comes from the tenderloin and generally consists of a mild taste.  One of our favorites

 

Filet of Prime Rib

Combining the superb texture of steak with the rich flavor of prime rib, these filet of prime rib cuts offer a fabulous mix of texture and taste.  A bit sharper taste than filet mignon - one of the most popular steak cuts.  Great for any occasion - from barbecue to more formal dining.

 

Porterhouse Steak

Often the choice for those looking for variety and needing to feed large groups, the porterhouse steak is famed for combining a tender filet mignon and a tasty New York Strip steak. 

 

Top Sirloin

Those looking for lean but bold flavor love the top sirloin.  Featuring a firm texture its strong beef flavor and texture are a favorite for barbeques and when cut by expert meatcutters provide a unique and powerful taste.

 

Strip Sirloin Steak

Taken from the center of the loin, the strip sirloin steak includes a white tail component that comes alive with flavor when cooked.  A firm and full texture compliment this favorite of the sirloin cut.

 

T-Bone Steak

Actually includes New York Strip and filet mignon -- similar to the Porterhouse steak but the filet is slightly smaller. 

 

Triple trimmed Filet Mignon

For those who love steak and want the leanest cut of all is the triple trimmed filet mignon.  This is a choice filet mignon that has been completely trimmed of all exterior fat and is cut by the steakcutter from the leanest part of the tenderloin.  A favorite for those on ultra low fat diets or who crave the tenderness & taste of filet mignon but want the absolute leanest cut possible.
